Hey guys!

Tonight has been hectic!  I left work at 6:30 and got stuck in the worst traffic in a long, long time.  It literally took me an hour to go a mile.  After sitting at the same light for 15 minutes and not moving an inch, I made a strategic left turn and took another route home.  Moments like these make me so glad I bought a car with a GPS!  I also had to stop at Target on the way home to get my new prescriptions, so it was 9:00 by the time I was able to start on dinner.  I'm proud though, no fast food!

Thank God tomorrow is Friday!  :-)  

Here's a quick re-cap of today's eats.  Since the dentist said I was recovering well, I was a little more brave with my food choices.

Morning Snack - Overnight oats made with 1/3 cup oats, 2/3 cup unsweetened vanilla almond milk, 1/2 scoop chocolate peanut butter protein powder, 1/2 scoop chia seeds, unsweetened coconut, and goji berries.

Lunch - Chicken sandwich with provolone, lettuce, and mayo on a toasted roll.  This wasn't the healthiest option, but boy was it good!  I also had a few french fries.  

Afternoon snack - Cashew Cookie Larabar 

Dinner - Scrambled eggs made with one egg, 2 whites, diced orange pepper, and 2% cheddar, plus sweet potato hash browns seasoned with garlic powder, dulse, and black pepper.


When I threw my larabar wrapper away this afternoon, I couldn't help but notice the embarrassing amount of unnecessary trash I had accumulated.  I use these styrofoam cups for my coffee because I don't want to wash my mugs in the office sink.  I know that sounds so ridiculous, but my building is really old and I always wonder how clean the water is.  Dumb, I know.  But I can't get over it.  Today, I forgot my re-fillable water bottle, so I wasted 2 disposable cups on that too.  Are there any areas in your where you know you are wasteful but somehow justify it?

Early Morning Nourishment

Good morning sunshines!

I just got back from the dentist.  He told me it looks like I'm healing fine, but I'll probably be in pain for quite some time.  :/   I was starting to feel like a big baby since I still hurt so much, but he made me feel better by explaining why this particular tooth was such a problem.  I left the office with more prescriptions, and yet another follow up appointment in four weeks.  

When I got home, I made a smoothie.  

In today's mix:
  • 1 cup unsweetened vanilla almond milk
  • 1 banana
  • 1 mini apple
  • 1 navel orange
  • approx. 2 inch piece of cucumber
  • handful of parsley
  • 1 scoop vanilla whey protein powder


I still have an hour or so before I have to leave for work, so I'm off to brew some coffee and check up on your blogs.

In Need of a Caffeine Boost

Hey hey!

Did you have a good Wednesday?   

My Dunkin Donuts coffee was so good yesterday that I decided to go back for more this morning.  I ordered the exact same thing, medium hazelnut with skim milk.  

I just sort of held the camera up and snapped this picture, so I'd say it turned out fairly well.  But, I must say that I do not recommend taking pictures while driving 80 mph.  Do as I say, and not as I do.  :)   

That leads me to the question, do you speed?  I admit I tend to go a little fast on the highways, but I drive close to the speed limit in residential areas, and I'm a SLOW POKE in parking lots.  I've seen a car hit a pedestrian, and I almost ran over a woman who fell off her bike once.  I don't play around in areas where people might be out, especially children.  I know how easy it is for someone to just appear out of nowhere.  But on the highway?  I'm gone! 

Anyway, back to food.  

For breakfast, I had a cinnamon raisin bar from my desk stash.  Gina sent me some of these Raw Organic Food Bars a little while ago, and I'm seriously hooked now!  
 
They are so good!     

For lunch, I had lasagna from the work cafe.  So what if I'm using my jaw being sore as an excuse to eat lots of melted cheese?

I didn't get a lot of sleep last night, and it definitely caught up with me this afternoon.  My cell mate is out of town this week (in Vegas - lucky bastard!) so I'm all alone for most of the day with just my thoughts and XM radio.  Usually I can at least count on him for some conversation to wake me up!  Today, I had to rely on good old caffeine.   

Around 4:00, I had a cup of hazelnut coffee with vanilla soy creamer.



I also had a banana.  I was trying to find the most un-phallic like angle for this photo.  

For dinner, I had a can of Amy's split pea soup.  Amy's never disappoints!  

Tomorrow morning, I have a follow up appointment with my dentist at 7 am!  I am not looking forward to being up that early!  I hope they only have good things to tell me considering I still have no feeling on my lower left lip!  Since I'll be up with the chickens, I'll probably have time for a morning post.  I'll see you then!

Nursing Home Food

Hello!

This post is going to be short and sweet because I really don't have anything on my mind right now...  Ahhh, I love painkillers.  :-)   

I kid.

I wasn't hungry for breakfast when I got up this morning, but I did stop and get a medium hazelnut coffee with skim milk on my way to work.  Observe my glasses on the console behind the cup and not on my face where they should be.

Around 11:00 this morning, I finally wanted my breakfast!   I had overnight oats made with the following:
  • 1/2 cup oats
  • 1 cup unsweetened vanilla almond milk
  • 1/2 scoop chia seeds
  • 1/2 scoop chocolate peanut butter protein powder
  • generous sprinkle of cinnamon
  • small handful of goji berries
I mixed all of the ingredients together, then let it sit in the fridge overnight.

Sometimes I'll heat up my overnight oats, and sometimes I'll just eat them cold.  Today, I ate them cold, and they were wonderful!  I love the way the dried goji berries plump up.  So delicious!

For lunch, I had the most appealing soft food in my work cafe - vegetable lasagna.  I also had a diet Dr. Pepper because those jerks insist on making me wait in a line next to the pretty drink display.  I just stand there thinking, "mmm.... a Dr. Pepper would be so good."  Then next thing you know, I've got it in hand.

I had packed a banana to have as a snack, but the rich lasagna kept me full throughout the afternoon.  It's funny because I really wanted a salad for lunch today.  Now that lettuce and spinach are "forbidden" foods, I want to eat them like candy!  Too bad the thought of gnawing on greenery makes me want to cry.

Dinner was as simple as it gets.  I heated up leftover mashed potatoes and Annie's mac & cheese.  I added some 1% milk to the mac & cheese to make it creamy again.


It's Tuesday night, which in the Casa de Laura means only one thing - The Real Housewives!
